Sunday Favourites

April 29, 2018

After a crazy few weeks over here - wedding, moving, piles of work - I'm back in the groove with getting new material and recipes ready for this space. It's an inspiring time of year now that everything is coming back to life and I'm feeling calm and productive again now after a stressful period. Fingers crossed the bees are as profuse as the blossoms are at the moment (just look at those apple blossoms!) and we'll have piles of local produce this year after a thin autumn last year due to a late frost.

Now that May is around the corner, we're talking rhubarb, strawberries, asparagus, and lots of greens. But first, this week, my favourite Scandinavian influenced cinnamon buns, followed by a few seasonal recipes to get you inspired as we move fully into spring. This favourites post is full of links featuring some of the best spring produce from some of the best plant based blogs in the biz, so if you're looking for ideas, I've got you covered!

Link love:

Raw Asparagus Salad with Walnuts + Breadcrumbs from Local Haven • highlight that gorgeous fresh asparagus by eating it raw, why not! Such a simple, stunning spring meal.

Vegan Vanilla Granola from Well and Full • not about spring directly, perhaps, but perfect served with strawberries at this time of year.

Vegan Farro and Pea Cakes from Golubka Kitchen • change it up with some farro and try these crispy cakes with green peas (and check out their new cookbook while you're at it).

Romanesco Veggie Burger with Herby Lemony Radish Slaw from With Food and Love • this is another recipe from Veggie Burger Atelier, a new cookbook I recently shared about here - and these romanesco burgers look amazing.

Pistachio Rose Rhubarb Galettes from Kale and Caramel • a little out of my price range, maybe, but totally swoon worthy and perfect for mother's day coming up.

Roasted New Potato Salad with Lentils + Herb Dressing (on continuous rotation right now)

Vegan Pesto Broccoli Pizza
