Sunday Favourites

Welcome to a brand new series, Sunday favourites! This is a new weekly addition to the blog with some inspiration for the upcoming week – recipe ideas from here and around the web, some things I’m loving, and all-around good stuff. This series is inspired by The Full Helping and Half Baked Harvest.

Coming this week, the best way to eat lentils, a chocolate snack cake for my sister’s birthday, a healthy winter pizza, and more. If you like meal planning, make sure to scroll right to the bottom of this post for some wintery weeknight dinner ideas. Welcome to the first edition of Sunday favourites!

Link love:

Roasted beet sauerkraut sandwich • roasted beets, grainy mustard, sourdough… all the best things!

Quick yellow Thai curry • 20 minutes and no curry paste for an awesome weeknight dinner.

Cranberry citrus oat muffins • made with my go-to spelt flour & the prettiest winter ingredients.

Harvest bowls • from Gena’s new book, with a giveaway!

Natural fabric dyeing • not a recipe, but I’m getting more and more interested in dyeing with plants.

Things I’m loving:

The only toothpaste I’ll use, and by far the best natural toothpaste I’ve ever tried. Made in Canada!

Totally obsessed with this beautiful German made bathing suit that I can’t afford.

My sister gave me Dolly and Oatmeal’s chickpea flour cookbook for Christmas and it’s amazing.

Readings:
This lovely interview with the recently passed Ursula K. Le Guin, one of my favourite writers and a true force, for women and in general, in fantasy and science fiction.

For dinner this week:

Monday: Lentil and Potato Stew

Tuesday: Cold Weather Detox Salad with Crispy Lentils

Wednesday: Cozy Stuffed Sweet Potatoes

Thursday: Spinach Crepes with Roasted Roots and Tahini Sauce

Friday: Sweet Potato Lentil Hummus and a Vegan Mezze

For dessert: Ultimate Peanut Butter Cookies

Thanks for reading the first in the series! If you make any of the recipes, please tag me on instagram @occasionallyeggs and #occasionallyeggs so I can see what you’re making, or stay in touch via Facebook, pinterest, and Bloglovin. I’ll be back tomorrow with a new dinner recipe that I’ve been loving lately.
