Roasted Vegetable Pie with Puff Pastry
A roasted vegetable pie, made extra easy with (vegan) puff pastry is a great winter main dish! With pumpkin, cauliflower, and parsnip.
Step by Step
Add the roasted veg to the pastry and cover
Chill for at least 20 minutes before assembling
Roast the vegetables with herbs & spices
Roll out the puff and place it into a baking dish
Bake and serve
Roast the vegetables with olive oil, herbs, and spices for about 20 minutes
Add to puff pastry
Fold the pastry over the filling and cut slits for steam to escape. Add an optional egg wash here.
Bake about 30 minutes, or until golden, and serve hot.
