Preheat the oven to 180°C (350°F) and line or grease a 12-cup muffin tin. Prepare the apple and set aside.
Add the applesauce, milk, oil, and vanilla to a large mixing bowl. Whisk until well combined.
250 grams unsweetened applesauce, 120 ml non-dairy milk, 50 ml olive oil, 1 teaspoon vanilla extract
To the same bowl, add the flour, coconut sugar, cinnamon, baking powder, baking soda, nutmeg, and salt. Stir with a wooden spoon or spatula until just combined.
Add the apple pieces to the batter and gently fold in to evenly incorporate.

Divide the batter equally among the muffin cups. Bake for 20-22 minutes, or until a skewer inserted into the centre of a muffin comes out clean. Cool for five minutes in the muffin tin before carefully removing and cooling fully on a wire rack.
