This easy raw chocolate bark is topped with dried pomegranate and a healthy sorghum cereal for a crispy, melt in your mouth treat. Perfect for gift giving or keeping in the freezer for any time a craving hits.
Place a square of parchment paper onto a cutting board or baking sheet, and set aside.
In a heat proof glass bowl set over a small saucepan of simmering water, gently melt the cacao butter. Once melted, remove from the heat and whisk in the honey until fully combined. It should look like softened butter.
Add the cacao powder, vanilla, and salt, and whisk again to combine. Spoon the mixture onto the prepared parchment paper and smooth into a large, thin rectangle, a few mm thick.
Top the chocolate with the pomegranate and cereal, then place it into the freezer for at least two hours. Once frozen solid, break the bark into pieces and store in a sealed container in the freezer for up to a week (or longer, if it lasts that long).
