Raw Pecan Caramel Chocolate Truffles

Raw pecan truffles make a healthier, delicious dessert option or midday snack and food gift. With pecans, medjool dates, spices, and cacao.

  • 1 cup raw pecans
  • 8 large medjool dates
  • 1 tablespoon coconut oil
  • 1 tablespoon nut butter I used cashew butter
  • 1 tablespoon maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 tablespoon raw cacao
  • Pinch salt


  1. If the dates are hard, soak them for half an hour before beginning.
  2. In the bowl of a food processor, blend the pecans until fairly fine (see photo below). Add the dates, coconut oil, nut butter, maple syrup, vanilla, cinnamon, cacao, and salt. Blend until the dates are completely smooth and the dough sticks together when pressed.
  3. Form into small balls and freeze for half an hour. Roll in more cacao and serve. They're best if kept cold. Put them in the fridge for ten minutes before serving.
