Green Lentil Salad

This easy green lentil salad makes a great healthy lunch, either at home or to bring to school and work. Packed with fresh veggies and topped with a simple dijon dressing.

  • 1/2 cup cooked green lentils or lentil sprouts
  • 1/2 cucumber diced
  • 1 bell pepper diced
  • 1/4 cup frozen corn
  • 1 clove garlic minced


  • 1/4 cup extra virgin olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste


  1. Put everything in a bowl. So complicated, I know.


  1. Mix everything in a small dish and then pour over the salad. Then eat it!
