A healthier holiday option, these raw & vegan almond date truffles are made with almond flour, almond butter, dates, and spices. Topped with dark chocolate.

Ingredients
100grams / 1 cupalmond flour
80grams / 1/3 cupsoft dates
2tablespoonsalmond butter
1tablespooncoconut oil
1teaspooncinnamon
50gramsdark chocolate, melted, for toppingoptional
Instructions
Place the almond flour, dates, almond butter, coconut oil, and cinnamon into the bowl of a food processor fitted with the blade attachment. Blend on high until a smooth ball of dough forms.
Roll 1-2 teaspoons of dough into small balls with your hands until all of the dough has been used.
Place the truffles in the freezer for 30 minutes before topping with dark chocolate, and sprinkle with any other toppings you like. Store in a sealed container in the refrigerator for up to one week.
Notes
• If your dates are a bit harder, soak them in hot water for 30 minutes beforehand.
• Every once in a while I have to add a teaspoon or so of nondairy milk to make things come together here, depending on how runny my almond butter is. If your mixture seems too dry, you can do the same - but make sure you really blend it first to see if it comes together, as it can take a while for the dates to break down properly.
• You could also roll these in cacao powder!
