These einkorn pancakes are sweetened with honey and made with simple ingredients, for fluffy American-style pancakes made with a delicious ancient grain.
Heat a large frying pan over medium heat. Once the pan is hot, brush a little oil over the base with a heat-safe brush.
Oil for cooking
Add scoopfuls of the pancake batter into the hot pan (a gravy ladle is ideal for this), about 3-4 tablespoons of batter for each pancake.
Cook the first side for about 45 seconds, flipping once bubbles start to pop around the edges. Cook the second side for another 45 seconds or so. Both sides should be golden.
Continue until all of the batter has been used, brushing a small amount of oil onto the pan each time. Serve hot.
Notes
This recipe makes about 16 small-ish pancakes, and the estimated serving is four pancakes.* While you don't really need to sift for lumps in the flour, this will remove any lumps that might have formed in the baking powder and soda, which are very unpleasant to come across in pancakes.
