Easy Ratatouille (French Roasted Vegetables)

Description

No special arrangement needed! This easy ratatouille is made by roasting summer vegetables with herbs, oil, and a little vinegar until tender and caramelised.

Ingredients

  • 400 grams (14 oz.) zucchini large dice
  • 400 grams (14 oz.) cherry tomatoes halved
  • 350 grams (12 oz.) red peppers seeded and chopped
  • 3 small onions or shallots quartered
  • 4 cloves garlic skin on
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon herbes de Provence
  • ½ teaspoon fine sea salt to taste
  • ½ teaspoon black pepper to taste

Instructions

  • Preheat the oven to 190°C (375°F).
  • Place the zucchini, tomatoes, peppers, onions, garlic, oil, vinegar, herbs, salt and pepper into a large baking dish. Mix well to coat the vegetables. Keep an eye on the garlic and place them somewhere visible.
    400 grams (14 oz.) zucchini, 400 grams (14 oz.) cherry tomatoes, 350 grams (12 oz.) red peppers, 4 cloves garlic, 3 small onions or shallots, 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon herbes de Provence, ½ teaspoon fine sea salt, ½ teaspoon black pepper
  • Roast the vegetables for 50 to 55 minutes, or until the tops are starting to brown and all of the vegetables are soft. Carefully remove the cloves of garlic, peel, and add back to the dish.
  • Season to taste and serve hot with a cooked grain or fresh bread.

Notes

All of the vegetables should be cut to approximately the same size, about 3cm in rough squares. Use the halved cherry tomatoes as a size guide.
Serve over cooked bulgur, quinoa, or another grain to make a full meal. This is also good with pasta or fresh bread.
Eggplant (aubergine) can be added if you'd like. Use a little less zucchini and replace it with eggplant.
Storage: keep in a sealed container in the refrigerator for up to three days. Reheat in the oven or serve cold with bread.
