A vegetarian version of traditional German potato salad, this delicious warm salad is made with an oil and vinegar dressing, onion, hard boiled eggs, and dill.
Ingredients
800grams (1 ¾ lb)small waxy potatoesscrubbed
4tablespoonswhite wine vinegaror apple cider vinegar
4tablespoonsolive oilor neutral oil
1smallonionvery finely diced
2teaspoonsDijon mustard
½teaspoonsea saltto taste
½teaspoonblack pepperto taste
4largehard boiled eggssliced
1bunchdillfinely chopped, stems removed
Instructions
Place the potatoes in a large pot with enough water to cover and about a tablespoon of sea salt. Cover and bring to a boil over high heat, keeping an eye on the pot so it doesn't boil over. Reduce the heat and simmer, covered, for 15 to 20 minutes, or until the potatoes can be easily pierced with a fork.
800 grams (1 ¾ lb) small waxy potatoes
Drain the potatoes and set the pot back on the (turned off) burner to dry for five minutes.
Add the vinegar, oil, onion, mustard, salt, and pepper to the potatoes and mix well. It will seem like too much liquid* but the potatoes will soak it up.
4 tablespoons white wine vinegar, 4 tablespoons olive oil, 1 small onion, 2 teaspoons Dijon mustard, ½ teaspoon sea salt, ½ teaspoon black pepper
Stir in the sliced boiled eggs. The yolks will break apart and coat the potatoes. This is normal.
4 large hard boiled eggs
Stir in the dill and transfer to a serving dish if using. Serve the salad warm or at room temperature.

Notes
* At this stage, you can also add 200ml of hot vegetable broth, if you plan on serving the salad cold and would like for it to have a softer, saucier consistency.Storage: as written, the salad is best served warm or at room temperature the same day it's made. If chilled, the potatoes can get a little hard and the texture isn't as good. If the broth is added then it will keep well in the refrigerator for up to three days.
