Add the yogurt, milk, mango, honey, vanilla, and salt to a blender. Mix on high speed until very smooth.
150 grams (¾ cup) unsweetened Greek-style yogurt, 150 ml (⅔ cup) non-dairy milk, 150 grams (1 ¼ cup) frozen mango, 1 tablespoon honey, ½ teaspoon vanilla extract, Tiny pinch salt
Transfer the mango mixture to a bowl and whisk in the chia seeds, making sure to whisk thoroughly to avoid any clumps.
60 grams (⅓ cup) chia seeds
Refrigerate, tightly covered, for at least two hours, preferably overnight.
Divide the chia pudding into individual servings, top or layer with extra mango or mango puree, and store in sealed containers in the refrigerator for up to three days.
Notes
To make mango puree, I thaw frozen mango or use fresh mango and blend with an immersion blender until very smooth.Storage: keep in a sealed container or containers for up to five days in the refrigerator. Freezing: prepare as usual and spoon into freezer-safe containers (I use canning jars). Freeze for up to three months and thaw in the refrigerator before serving as usual. If you’re going add toppings, either use frozen mango and keep it frozen, or make a cooked puree. Don’t use thawed frozen fruit.
