Once boiling, reduce the heat and simmer with the lid cracked to let steam escape, for about ten minutes. The tea should reduce slightly during this time.
Once the tea has finished simmering, remove it from the heat and stir in the orange juice and honey. Sweeten to taste and serve hot.

If you'd like to use dried orange peel, use about the equivalent of two oranges. The juice can be omitted if using dried peel, but increase the simmering time to 20 minutes.
