Drain and rinse the beans, carefully rinsing off any residue and allowing the water to drain off.
800 grams (28 oz.) canned mixed beans
Place the beans in a large mixing bowl with the cucumber, onion, and parsley.
1 medium English cucumber, 1 small red onion, 1 bunch parsley
To make the vinaigrette, mix the oil, vinegar, maple syrup, mustard, salt, and pepper in a jar or bowl until combined.
4 tablespoons extra virgin olive oil, 2 tablespoons apple cider vinegar, 1 tablespoon maple syrup, 2 teaspoons Dijon mustard, ¼ teaspoon fine sea salt, ¼ teaspoon black pepper
Pour the vinaigrette over the bean mixture and toss well to combine. Serve immediately or, if possible, cover tightly and refrigerate for at least one hour before serving.
Notes
You'll need two standard 400ml (14 oz.) cans of mixed beans for this recipe.Storage: keep in a sealed container in the refrigerator for up to five days. Mix again before serving to reincorporate any vinaigrette that may have migrated to the bottom of the container.If you know you plan on storing for several days, slice the cucumber lengthwise and scrape out the seeds with a spoon before chopping to prevent it watering down the salad.
