Foraged Food

Whether you’re new to it or an old hand, these foraged food recipes are delicious options to make with wild foods like nettle and elder. These are based on what’s available to forage in western and northern Europe.

Use up some of that pesky nettle with a blanched nettle pesto or vivid green stinging nettle soup. The young tops are best and that’s also the best time to try to cut them back in your garden!

Try some other wild greens with a lemony potato sorrel soup, garlic mustard pesto, and wild garlic salt. If you have plenty of the latter use it in wild garlic soup and wild garlic pesto, too.

For something sweeter, use wild edible flowers to make honey elderflower cordial, lilac lemonade, or this layered strawberry elderflower scone cake.
