New potatoes Olive oil Sea salt Black lentils Spinach Dill Chives White wine vinegar Dijon mustard Maple syrup Sea salt Black pepper

Prep the potatoes

Scrub and trim the potatoes as needed, then add them to a large pan with the oil and salt.

Roast

Cook the potatoes for about 40 minutes, or until crisp and golden.

Make the vinaigrette

While the potatoes are cooking, mix the vinaigrette ingredients in a jar or dish.
