I’ve gathered up dozens of my favourite plant based breakfast recipes to make our mornings a bit less monotonous. Here you’ll find a variety, from waffles to crepes to great GF options like breakfast cookies. I’ve popped some bread recipes in too so you have several make-ahead options. So go, make breakfast more special!

Carrot Bread
 Fruit-sweetened vegan carrot bread made with dates, banana, and ginger makes for a healthier breakfast or snack. Made with spelt flour.

Spelt Banana Bread
Vegan spelt banana bread, made with whole grain spelt flour, ripe bananas, and flexible add-ins so you can make it how you like most.

Vegan Gluten Free Banana Bread
An easy one-bowl vegan gluten free banana bread, made with a blend of whole grain oat and buckwheat flour. Lightly sweet and studded with chocolate chunks, it's a great go-to recipe!

Healthy Baked Apples
Healthy baked apples, filled with a simple gluten free granola, are about as autumn as you can get. They make a nice special breakfast or dessert, especially when topped with extra maple syrup.

A Better Porridge
Spices are sauteed in a little coconut oil before adding oats and nondairy milk in this healthy vegan porridge loaded with fruit and seeds. Using this different method results in a creamy, flavourful oatmeal.
